    I've updated the SD Card only kit with the Linux demo kernel and now am interested in adding either Gui feature to the Linux kernel, any ideas and locations to get this feature?

    Try QTEmbedded
    Download it, compile it for your target - ARM(with or without X Server Support), load target libs to your root file system.
    Develop your GUI app with QT Creator,
    compile it with the prebuilt tool suite, and now load the binaries into your board
